Zabo Sushi & Cocktails sits on the doorstep of the Plaza Mulato Gil de Castro, a good reflection of the artistic, cultural, and cosmopolitan nature of the Lastarria neighbourhood.

Zabo specializes in an innovative and engaging combination of Japanese and Peruvian gastronomy, offering an extensive menu of salads, soups, sashimi, hosomaki, nigiri sushi, handrolls, sushi rolls, and hot dishes. It features not only well-known dishes, but also original dishes offering new taste sensations.

The restaurant is as well-known for its drinks as it is for its food, showcasing over 100 different types of cocktail from all over the world.

Zabo is jointly owned by couple Patryk Zablocki and Claudia Otto. Patryk was born in Finland to a Finnish mother and Polish father, and moved to South America with his family at the age of five when his father found work in Chile. As a young boy, Patryk had created an imaginary group with his friends using wooden toys, creating company names for themselves. While his friend Daniel came up with Greve & Company, the 8-year-old Patryk proclaimed the birth of Zabo & Company, using his childhood name, which would later morph as the name of his restaurant.

Patryk has always a fan of great food and service, and studied hotel management in Les Roches Crans-Montana in Switzerland before going into the catering industry and establishing Zabo Sushi in Santiago in August 2008.
 
Production manager Claudia has considerable experience in 5-star hotel management and is reputed to have an incredible knack for keeping the restaurant running smoothly.

Both Patryk and Claudia are firm devotees to luxury and pleasure, and are fanatics of sushi from all over the world. Running the restaurant is the perfect opportunity for them to work with what they enjoy most and both can often be found chatting and socializing with the customers, creating a familiar and welcoming ambiance.

Patryk emphasizes the cosmopolitan nature of the restaurant. He speaks five languages, which means that visitors from all parts of the world always receive a warm welcome.

Despite seating for around 100-120 customers, with around 40 tables indoors and another 40 outdoors, Zabo is always busy; as well as being a standard restaurant, it
also hosts various functions and business meetings, as well as offering catering services.

Zabo’s success has been variously attributed to the quality of the product served, the direct attention paid to the customer, the level of innovation, and the constant change and updating of ingredients according to season; whatever the reasons for its success, there is no doubt that a trip to Zabo provides a new experience in delicious and innovative food and drink.
